Speculoos Tiramisu
Coffee-free version: speculoos cookies briefly dipped in chocolate milk, layered with a light mascarpone cream made with whipped yolks and whites. Best made the day before for perfect set.
Steps

Separate the 2 eggs: yolks on one side, whites on the other.

Whisk the yolks with the sugar, then add the mascarpone and mix until smooth and creamy.

Whip the egg whites to stiff peaks with a pinch of salt.

Gently fold the whipped whites into the mascarpone cream.

Mix the milk and cocoa powder in a bowl for dipping.

Quickly dip the speculoos cookies (in and out) in the chocolate milk, then alternate layers of cookies and cream in 4 glasses or a dish.

Refrigerate for at least 4 h, ideally overnight.

Just before serving, crumble a little speculoos on top.
