Atlanta Wings with Clarified Butter

Chicken wings are first roasted and then fried for crispy skin, before being tossed with clarified butter, garlic, pepper, and dried lemon zest.

    Preheat the oven to 200 °C.

    Arrange the chicken wings on a baking sheet and season them evenly with salt on both sides.

    Bake the chicken wings for 15 minutes.

    Melt the butter and let it settle. Skim off only the fat and strain it through a fine-mesh sieve to obtain clarified butter.

    Remove the zest from the lemon and dehydrate it in the oven at 60 °C for 15 minutes, without browning it.

    Place the cooked wings in the hot oil and fry for 4 minutes, until deeply golden brown.

    Place the wings in a large bowl, add the clarified butter, garlic powder, pepper, and dried lemon zest, then toss to coat.

    Arrange the wings in a ring and drizzle them with the remaining mixture.
