Tomato sauce
Basic Italian tomato sauce, gently simmered with onion, carrot, and celery, deglazed with white wine and scented with bay leaf, then blended smooth. Ideal for arrabbiata, pizza, parmigiana, or gnocchi alla Sorrentina.

Roughly chop the onion, carrots, and celery.

Heat the olive oil in a large pot, add the vegetables, season with salt and pepper, then sweat gently until soft without browning.

Deglaze with the white wine and let the alcohol evaporate.

Add the peeled tomatoes and crush them lightly with a spoon (rinse the cans with a little water and pour the water into the pot).

Add the bay leaves and the whole potato.

Once boiling, reduce the heat to low and cook for 1 h 45 over very low heat.
