Chocolate Cake
A chocolate cake with a light, mousse-like texture, made with whipped egg whites and a short baking time. Serve warm with a scoop of vanilla ice cream.
Steps

Preheat the oven to 200 °C, butter a 22 cm round cake tin, and set aside.

Separate the egg whites from the yolks, then whisk the whites with the salt for 6 minutes until firm peaks form.

Add 20 g of sugar to the whipped egg whites and mix for 20 seconds, then set aside.

Heat the remaining 180 g of sugar with the egg yolks and butter for 6 minutes at 70 °C.

Add the dark chocolate, wait a few seconds for it to melt, then mix for 20 seconds.

Add the flour and mix for 10 seconds.

Gently fold in the whipped egg whites and mix for 15 seconds, then pour the batter into the prepared tin.

Bake at 200 °C for 10 to 15 minutes, then let cool before unmolding.
