Vanilla custard tart
A smooth vanilla custard tart made with carefully cooked pastry cream and encased in a crisp shortcrust pastry.
Steps

Mix the flour and cornstarch with a little cold milk to obtain a smooth mixture without lumps.

Add the egg yolks and sugar, then mix.

Bring the remaining milk to a boil with the vanilla bean.

Pour half of the boiling milk over the egg yolk and cornstarch mixture to loosen it.

Pour everything back into the saucepan over the heat and boil for at least one minute.

Line a tart ring with the shortcrust pastry, rolled out to a thickness of 3 or 4 mm.

Refrigerate the pastry shell for at least one hour.

Pour the cold custard into the chilled pastry shell.
