Avocado & Smoked Salmon Verrines

Fresh, festive verrines made with a silky avocado cream, herbed cream cheese with dill, and pieces of smoked salmon. Perfect for appetizers.

    Halve the avocados, remove the pits, then scoop out the flesh; roughly blend with the salt, pepper, and the juice of half a lemon. Set aside.

    In a bowl, blend the cream cheese with the liquid cream; lightly season with salt and pepper, then fold in the dill.

    Cut the smoked salmon into small pieces and drizzle with the juice of the other half of the lemon. Set aside.

    Assemble the verrines: spoon the avocado cream into the bottom, add the dill cream cheese, then top with the salmon pieces. Refrigerate before serving.
