Quick pizza dough
Quick pizza dough for 6 pizzas: a supple dough that’s fast to make with a short knead, then a rest to build strength. Ideal for baking right away or letting ferment a bit longer for more flavor. Serve topped (e.g., margherita).

Crumble the fresh yeast into the water, then pour all the water into the flour.

Start mixing with a spoon, add the salt, then knead by hand, stretching and pressing the dough for 5 minutes.

Cover the dough with plastic wrap and let rest for 30 minutes at room temperature to build strength.

Degas and divide into six dough balls (about 280 g each), shape, and let the balls rest covered for at least 1 hour at room temperature (1–2 h is fine).

Lightly flour the work surface, stretch each ball into a pizza and top quickly.
