Cauliflower Tabbouleh
A cold salad without couscous where grated cauliflower stands in for the grains, mixed with tomato, cucumber, red onion, herbs, chickpeas, Comté and ham, all dressed with lemon and olive oil. Serve well chilled.
Steps

Cut the Comté into small cubes and chop the cooked ham.

Clean the cauliflower, remove the core, break into florets, then pulse or grate to a couscous-like texture.

Cut the tomato and cucumber into small dice.

Finely slice the red onion, then chop the parsley and chives.

Combine the cauliflower “couscous” with the tomato, cucumber, onion, parsley, chives, ham, and Comté, then add the chickpeas.

Season with salt and pepper, add the lemon juice and olive oil, and mix well.

Let rest for 30 minutes in the fridge before serving.
