Prepare the feta-garlic sauce according to the sub-recipe, then set it aside.
Thinly slice the cucumber and red onion, then toss them with the oregano, parsley, jalapeño, and red wine vinegar; season with salt to taste.

Heat a cast-iron grill pan over medium-high heat, lightly grease it, then sear the steak for about 3 minutes.
