Melon, Cucumber, Burrata and Prosciutto Salad
A summer salad combining melon, cucumber and tomatoes, dressed with a lemon–honey vinaigrette, with creamy burrata and ribbons of prosciutto. Serve well chilled.
Steps

Cut the melon and cucumber into cubes, and halve the cherry tomatoes.

In a bowl, whisk together the olive oil, lemon juice and honey, then season with salt and pepper.

In a salad bowl, toss the melon, cucumber, tomatoes and basil leaves, then drizzle with the vinaigrette.

Place the burrata in the center and add the ribbons of prosciutto. Serve chilled.
