Shrimp, Mango and Avocado Salad

A fresh, colorful salad combining just-seared shrimp, mango, avocado, red onion, and parsley, dressed with lemon juice and olive oil, with an optional touch of chili. Best served well chilled.

    Cut the mango and avocado into small cubes. Finely chop the parsley and the red onion.

    Sear the shrimp quickly over high heat to get some color.

    Place all the ingredients in a bowl. Add the juice of half a lemon, a drizzle of olive oil, salt, pepper, and, if desired, chili flakes. Toss and serve chilled.
