Curried Spinach with Coconut Cream

Spinach spiced with curry, simmered in silky coconut cream — a fragrant, creamy side dish. Serve with basmati rice or grilled fish.

Steps

    Place 1000 g frozen spinach in the Thermomix bowl.

    Let the spinach thaw (at room temperature or in the microwave), then drain.

    Add 1 peeled garlic clove to the bowl.

    Add 5 g peeled ginger to the bowl.

    Fit the lid with the measuring cup.

    Blend for 3 seconds at speed 7.

    Scrape down the sides of the bowl with the spatula.

    Add 2 tbsp sunflower oil to the bowl.

    Add 0.5 tsp ground coriander to the bowl.

    Add 0.5 tsp cumin to the bowl.

    Add 0.5 tsp turmeric to the bowl.

    Add 1 pinch ground cinnamon to the bowl.

    Fit the lid with the measuring cup.

    Sauté for 2 min 30 sec at 120°C, speed 1.

    Cook for 12 min at 100°C, Spoon speed.

    Add 200 g coconut cream to the bowl.
