Chili con carne
Hearty chili con carne with ground beef, red beans, and spices, brightened with a hint of chocolate and served with grated cheddar and crème fraîche. Serve with corn tortillas.

Grate the cheddar and set aside.

Heat the oil, add the ground beef, and cook for 12 min, stirring.

Add the crushed tomatoes, tomato paste, sugar, salt, bay leaves, turmeric, paprika, oregano, cumin, clove, and cayenne pepper, then simmer for 30 min.

Add the chocolate and red beans, then simmer for 3 min. Remove the bay leaves.

Serve the chili piping hot with grated cheddar and crème fraîche on the side.

Finely chop the cilantro.

Add the onion, chili, garlic, and tomatoes to the cilantro, then blend until finely chopped.

Put the avocado flesh in a bowl with the olive oil and lime juice, then mash or blend until smooth.
