Preheat the oven to 180 °C with the fan setting on.
Remove the paper from the shortcrust pastry, then use it to line a tart pan.
Spread the mustard over the pastry base using a pastry brush.
Drain and flake the tuna.
Crack the eggs into a mixing bowl, add the fromage blanc, Gruyère, tuna, salt, and pepper, then mix with a fork.
Pour the filling over the pastry.
Wash the tomato, cut it into 7 attractive slices, and arrange them on top.
Bake the tart for 40 minutes.
