Pork tenderloin in coconut milk

Pork tenderloin cooked in the Thermomix in a silky coconut milk sauce, scented with red curry, ginger, and lime. Serve with rice.

Steps

    Slice the tenderloin into rounds about 2 cm thick and set them on the work surface.

    Sear the slices in a very hot skillet with a drizzle of oil, browning about 1 minute per side.

    Place the slices in the Varoma basket/steaming basket and set aside.

    Place the garlic cloves and the onion in the Thermomix bowl.

    Fit the lid and blend 5 sec at speed 5.

    Scrape down the sides of the bowl with the spatula.

    Add the ginger, cumin, and red curry paste to the bowl.

    Add the coconut milk, tomato paste, lime juice, salt, pepper, and Espelette pepper to the bowl.

    Add the white wine to the bowl and position the cooking basket containing the pork slices.

    Cook 22 min at 100°C, speed 4.

    Check the doneness of the tenderloin and extend by 3 minutes if needed.

    Remove the cooking basket.

    Add the cornstarch to the bowl.

    Heat 3 min at 80°C, speed 4 to thicken the sauce.

    Arrange the pork slices on a serving dish and spoon the sauce over.

    Sprinkle the chopped chives (15 sprigs) over the dish.

    Serve (ideally) with rice.
