Veal Meatballs in Tomato Sauce

Tender veal meatballs simmered in a homemade tomato sauce, seasoned with Parmesan, parsley, and spices. Serve with pasta, blanched rapini, or bread.

    In a large skillet over medium-high heat, lightly brown the garlic, bay leaf, and red pepper flakes in the oil. Add the tomatoes and simmer over low heat for 30 minutes; crush them roughly, season with salt and pepper, and keep warm.

    In a food processor, process the bread into crumbs, mix it with the milk, and let it soak.

    Add the veal, Parmesan, egg, garlic, parsley, salt, fennel, oregano, and red pepper flakes, then mix with your hands.

    With lightly oiled hands, shape the mixture into meatballs of about 30 ml each.

    Place the meatballs in the tomato sauce, cover, and cook over medium-low heat, turning them a few times during cooking.
